Recipe: Salmon Dill Packets–Pairs with Dry Riesling

This recipe is extremely simple and always delicious.  You can substitute de-thawed frozen salmon fillets for fresh salmon.

Salmon Dill Packetspairs with Dry or Medium-dry Riesling

Serves 2

1 lb. salmon fillet, cut into two pieces and patted dry

2 T. unsalted butter

1 lemon, sliced into thin rounds

Salt and pepper to taste

4 sprigs fresh dill

 

Preheat oven to 400 degrees F.  Cut 2 pieces of aluminum foil approximately 16 x 8 inches each.  Place a salmon fillet on each piece of foil.  Season with salt and pepper.  Top each fillet with 1 T. of butter, a few slices of lemon and 2 sprigs of dill.  Fold and tightly seal packets.  Place in a shallow baking pan.  Bake 20 min. or until salmon is thoroughly cooked to 145 degrees F.  Use an instant-read thermometer to check the temperature by poking it through the foil and into the center of the fillet.  Remove from oven and let stand 5 min. before opening foil.
