A delicious and flavorful appetizer!
Ingredients
- 11 oz soft, plain chevre (goat cheese)
- 2 Tbsp honey
- 1 tsp olive oil
- pinch of salt
- zest of one lemon
- 1 cup herbes de provence
- 1 cup mix of chopped nuts & dried fruits*
- Your favorite crackers
*Pecans, almonds, hazelnuts, dried blueberries, dried cranberries, dried apricots… whatever you prefer or want to use up!
Instructions
1) Let chèvre soften slightly at room temperature, then use a fork to combine it with honey, olive oil, salt, and lemon zest.
2) Scoop about one half of a tablespoon of goat cheese and roll into a ball (you should get between 30-35 goat cheese balls). Place them on a parchment lined baking sheet or a silpat and refrigerate for about 20-30 minutes.
3) To make the coating, combine the herbes de provence and chopped mixture.
4) Roll the chilled goat cheese balls in the coating: coat well and keep chilled before serving.

5) Serve gently pressed on to your favorite crackers.
Silver Thread wine pairing: Blanc de Blancs, Reserve Riesling, or Chardonnay.
